These delicious mini Cheesecakes are not only delicious but also gluten-free and keto. They are straightforward to prepare and require simple ingredients.
2 teaspoons melted butter
15 ounces of cream cheese
2 teaspoons lemon juice
2 beaten eggs
1/4 cup cream
1/4 sugar substitute of your choice
4 teaspoons of vanilla extract
Strawberry sauce ingredients (or berries of your choice)
2 cups of strawberries (berries of your choice)
3 teaspoons lemon juice
2 sugar substitutes of your choice
8 tablespoons water
Ingredients for the crust
1 cup of almond flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1 tbsp sugar substitute
1 beaten egg
1 tbsp melted butter
1/2 tbsp oat fiber
1- Preheat oven to 350F.
2- Add all ingredients for the crust in a blender and mix until well incorporated.
3- Prepare 10 to 15 muffin molds (depends on the size of the molds). Add one tablespoon dough per mold and push the crust into the bottom by hand.
4- Bake the crust for 15 to 20 minutes until golden.
